Chocolate Tofu Mousse Pie

Ingredients:

Chocolate Tofu Mousse Pie

  • 2 packages (12.3 ounces each) Mori-Nu extra firm silken tofu
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 package (12 ounces) semisweet chocolate chips
  • 1 (9-inch) graham cracker pie crust
  • Fresh fruits for garnish

Directions:

Place tofu, vanilla and salt in food processor or blender. Melt chocolate chips in a double boiler or in a microwave oven on medium power for 3 to 4 minutes, stirring between each minute. Pour melted chocolate into food processor and process until smooth. Pour into pie crust; refrigerate for at least 1 hour. Makes 8 servings.
