Cake:
Preheat oven to 350°F. Grease and flour a 13 x 9 x 2-inch pan. In a large mixing bowl, beat the eggs and oil until foamy. Add sugar and vanilla; mix well. In a separate bowl, mix flour, cinnamon, baking soda and salt. Stir in dry ingredients to oil mixture. Mix in apples and nuts (Note: the batter will be very thick and appear to have more apples than batter). Pour into prepared pan. Bake for 45 to 50 minutes; cool. If desired, frost with Cream Cheese-like Frosting (recipe below). Makes 20 servings.
Cream Cheese-like Frosting:
In large bowl of electric mixer, beat all ingredients until fluffy. Makes about 3 1/2 cups.
